Green Olive Pasta

Video instructions for making Green Olive Pasta

Ingredients

1 lb dried bucatini or other long pasta (spaghetti, linguini)
2 Tbs unsalted butter
1 Tbs olive oil
1 ½ c. Castelvetrano olives or another mild green olive, such as Cerigno, pitted and coarsely chopped
4 cloves garlic, minced
Juice of 1 medium lemon
¼ c. coarsely chopped fresh parsley leaves
Freshly ground black pepper
Kosher salt
Shaved Parmesan or Pecorino cheese

Directions

Bring a large pot of salted water to a boil. Add the pasta and cook 1 minute less than al dente, 8 minutes, or according to package instructions

Meanwhile, heat the butter and olive oil in a large skillet over medium heat. Add the olives and garlic and cook until softened and fragrant, 3 to 4 minutes. Remove from the heat and stir in the lemon juice.

Reserve 1 c. of the pasta water, then drain the pasta. Return the skillet to medium heat and add the pasta and the reserved pasta water. Simmer, tossing and stirring the pasta, until the pasta is al dente and the sauce thickens and coats the pasta, 1 to 2 minutes. Add the parsley and a few generous grinds of black pepper and toss to combine. Taste and season with more pepper and salt as needed (since the olives are already salty, you might not need to add any salt) Divide among shallow bowls, top with shaved Parmesan or Pecorino cheese, if desired, and serve.

Green olive pasta can be enjoyed at room temperature or reheated in the microwave. Just add a tablespoon of water so the pasta does not dry out.

 Taco Stacked Dinner

Ingredients

Taco Meat

2 tsp chili powder
2 tsp paprika
1 tsp garlic powder
1 tsp onion powder
1/2 tsp ground cumin
pepper to taste
salt to taste (I sub with 1 bouillon cube)
1 lb lean ground beef (or meat of your choice)
1/3 to 1/2 cup water

Other Stack Ingredients

rice or tortillas or tortilla chips

shredded cheese

shredded lettuce

diced tomatoes

sour cream

salsa

avocado or guacamole

Directions

In a medium saucepan over medium heat, add the ground beef and brown the meat. In a medium size bowl, mix together all of your spices. Set aside.
Once the meat is browned, add in the spices to the saucepan and mix it in well.
Stir in the water and let simmer for 30 min. for best flavor.

Put the taco meat on top of rice, tortillas, or tortilla chips. Add the following ingredients to your stack:

shredded cheese
shredded lettuce
diced tomatoes
sour cream
salsa
avocado or guacamole

 Homemade Mac and Cheese

Ingredients

8 oz elbow macaroni uncooked

Cheese Sauce

2 TBS butter
2 TBS all-purpose flour
½ tsp sea salt
¼ tsp garlic powder (optional but recommended)
1 cup whole milk
¼ cup sour cream or Greek yogurt
2 cups shredded cheddar cheese

Directions

Cook elbow macaroni according to package instructions. Be sure to add ¼ tsp salt to the water used to boil the noodles. Drain, and set aside.

Make the cheese sauce
Mix flour, sea salt, and garlic powder together in a small bowl. Set aside.
In a medium saucepan over medium heat, melt the butter.
Add flour mixture and whisk to combine.
Cook for 1 minute until mixture is slightly brown.
Add 1 cup milk and whisk until the mixture is smooth.
Add sour cream (or Greek yogurt) and whisk until smooth.
Cook on medium-high heat until the mixture is thickened (about 3-5 minutes). Do not let it boil.
Once mixture is thick (sticks to the back of the spatula), reduce heat to low and add cheese. Whisk until the cheese is melted and the mixture is smooth. Taste and add more salt/seasoning if desired.
Add cooked pasta to the pot of cheese sauce and stir until the sauce is evenly distributed.
Let the mac and cheese cool for 3-5 minutes or until the cheese sauce has thickened a little bit and sticks to the noodles.

Store the leftovers in an airtight container in the refrigerator. Since it thickens as it cools, you may need to add 1-2 TBS of milk when it’s reheated (can be in the microwave) to restore its original creaminess.

Stir Fry

Ingredients

1 lb boneless, skinless chicken breast cut into 1 inch cubes
salt and pepper to taste
2 tbsp olive oil divided
2 cups broccoli florets
1/2 yellow bell pepper cut into 1 inch pieces
1/2 red bell pepper cut into 1 inch pieces
1/2 cup baby carrots sliced
2 tsp minced ginger
2 garlic cloves minced

Stir Fry Sauce
1 tbsp corn starch
2 tbsp cold water
1/4 cup low sodium chicken broth
3 tbsp low sodium soy sauce
1/4 cup honey
1 tbsp toasted sesame oil
1/2 tsp crushed red pepper flakes

Directions

In a medium size bowl, whisk together corn starch and water. Add remaining ingredients (chicken broth, soy sauce, honey, and toasted sesame oil, red pepper flakes) and whisk to combine. Set aside.

Add one tablespoon of olive oil to a large skillet or wok and heat over medium high heat.

Add chicken (in batches if necessary) and season with salt and pepper. Cook for 3 to 5 minutes or until cooked through. Remove from skillet.

Reduce heat to medium and add remaining tablespoon of oil to the skillet.

Add broccoli, bell pepper, and carrots and cook, stirring occasionally, just until crisp tender. Add ginger and garlic and cook for an additional minute.

Add chicken back into the skillet and stir to combine.

Whisk stir fry sauce and pour over chicken and vegetables and stir gently to combine.

Bring to a boil, stirring occasionally, and let boil for one minute.

Serve with rice and/or chow mein if desired.

Texas Sheet Cake

Ingredients

Cake
1 stick butter
1 cup water
3 Tablespoons cocoa powder
2 eggs
2 cups sugar
2 teaspoons vanilla extract
1/2 cup sour cream
2 cups flour
1 teaspoon baking soda

Frosting
1 stick butter
4 Tablespoons cocoa powder
4 Tablespoons milk
4 cups powdered sugar

Directions

Directions for cake
In a saucepan, melt and mix together butter, water, and cocoa powder, then set aside.
In a large bowl or mixer, mix together eggs, sugar, vanilla extract, and sour cream.
Combined the mixtures above and then add the flour and baking soda.
Pour the batter onto a cookie sheet with tall edges and bake for 15-20 minutes at 375 degrees.
Frost while still warm

Directions for frosting
In a saucepan, melt and mix together butter, cocoa powder, and milk. Take off heat and add powdered sugar. Stir until smooth.

Chocolate Chip Cookies

Ingredients

2 and 1/2 cups flour
1 teaspoon baking soda
2 teaspoons cornstarch
1/2 teaspoon salt
3/4 cup melted butter
3/4 cup brown sugar
1/2 cup granulated sugar
2 eggs
2 teaspoons vanilla extract
1 cup chocolate chips

Directions

Preheat oven to 325°F.

Mix melted butter, brown sugar, and granulated sugar together until no brown sugar lumps remain. You do not need to use a mixer. Whisk in the eggs and vanilla.

Add in the flour, baking soda (make sure there are no lumps), cornstarch, and salt. Mix until combined. Stir in chocolate chips.

Line a baking sheet with parchment paper, or use cooking spray. Scoop the dough onto the pan in about 2 tablespoon size lumps. Cook for 11-12 minutes, or until the edges of the cookie are lightly browned.

Let the cookies cool for a few minutes on the pan, then put them on a cooling rack.

Write a note or copy this scripture on the package of cookies before you give them to the missionaries. :)
